Definition: The Director of Beverage at Horseshoe Bay Resort is responsible for curating and overseeing the resort's comprehensive beverage program across all outlets, including restaurants, bars, lounges, in-room dining, and event services. This role ensures the delivery of exceptional beverage experiences that align with the resort's luxury standards, enhances guest satisfaction, and drives revenue growth.
Key Responsibilities:
Beverage Program Development and Management:
- Design and implement a diverse beverage menu that complements the resort's culinary offerings and caters to a wide range of guest preferences.
- Develop seasonal and signature cocktails and maintain an extensive wine and spirits selection.
- Regularly review and update the beverage offerings to stay current with industry trends and guest expectations.
Supplier and Vendor Relations:
- Establish and maintain strong relationships with beverage suppliers and distributors.
- Negotiate contracts to secure favorable pricing and ensure consistent quality and timely delivery of products.
- Organize tastings and product evaluations to introduce new offerings and refine existing selections.
Cost Control and Inventory Management:
- Monitor and manage beverage costs to maintain profitability while ensuring quality standards.
- Implement inventory control measures to minimize waste and prevent shortages.
- Oversee the ordering and stocking of beverage supplies, ensuring all outlets are adequately supplied.
Associate Training and Development:
- Work with the Director of Training to help design and implement training programs for bartenders and service staff on beverage preparation, presentation, and responsible alcohol service.
- Foster a culture of continuous learning and professional growth within the beverage team.
- Stay informed about industry certifications and encourage associates to pursue relevant qualifications, including certifications in mixology and wine expertise.
Guest Experience Enhancement:
- Engage with guests to gather feedback and ensure their beverage preferences are met.
- Address and resolve any guest concerns related to beverage service promptly and professionally.
- Collaborate with the events team to create tailored beverage experiences for special occasions and group events.
Compliance and Safety Standards:
- Ensure all beverage operations comply with local, state, and federal regulations, including health and safety standards.
- Maintain up-to-date knowledge of liquor laws and responsible alcohol service practices.
- Conduct regular audits to ensure adherence to safety and sanitation protocols.
- Must be TABC Certified
Strategic Planning and Reporting:
- Develop and implement strategies to increase beverage sales and enhance profitability.
- Analyze sales data and guest feedback to identify areas for improvement and growth.
- Prepare regular reports on beverage performance and present findings to the Complex Director of Food & Beverage.
Qualifications:
Education:
- Sommelier, with a deep understanding of wine, spirits, and cocktails
Experience:
- Minimum of 5 years in a senior beverage management role within a luxury resort or hotel environment.
- Proven experience in overseeing multiple beverage outlets and managing a diverse team.
- Strong financial acumen with experience in budgeting, forecasting, and cost control.
Skills and Attributes:
- Exceptional leadership and interpersonal skills, with the ability to inspire and manage diverse teams.
- Excellent communication skills, both written and verbal.
- In-depth knowledge of beverage trends, mixology, and wine and spirits.
- An ability to thrive in a fast-paced, dynamic environment while maintaining attention to detail.
